It was kept a mystery, just like where the servants' quarters were located. We never saw Chao-Li's bedroom (although we do know he did live in the Mansion), neither did we see Melody's room (although the show seemed to suggest that the head maid certainly had living quarters on the premises, too).

In that attic above Falcon Crest
Up Chase's ass. Which is why he was always angry.

I'd say Chao-Li cared for Apollo, like an egg. What if Chao-Li and Melody had the same bedroom, even if it was only once? I know it would have been highly unlikely, as Angela's right hand man was too set in his ways but such a scene would've been fun in a CARRY ON homage (à la Sid James and Barbara Windsor).

One of the few scenes with Apollo. He last appeared in the 3rd season.

An insider speaks about the understated character; the Peregrine Falcon Apollo, ('behind the scenes' from episode one of season 1, 1981):

"There is one more member of the family who needs explanation. He is a bird wearing a feathered hood and sitting on a pedestal in the last scene."

I always thought Apollo was probably a working bird, used to scare away other birds from the vineyards so I think Apollo probably was kept out there.

In episode 20 of the fourth season there is a deleted scene
Emma is feeding the falcon and tells Julia that she would like to free it.
Emma is feeding Apollo on the Falcon Crest Victorian Mansion veranda. When Julia joins her, Emma says she has thought about freeing the falcon, but Julia says that somebody might try to hunt him, and Falcon Crest is at least a place where he is taken care of.
The sisters speak about Gustav, and Emma says how much she wanted someone to love her and someone to make love to. Julia tries to cheer her up by reminding her that, as Melissa's matron of honor, she might catch the bride's bouquet.
t's unfortunate that the scene was removed.
We didn't see Apollo but we did see Ribman's parrot

As previously discussed Apollo should have been an ingredient, in the opening credits for the entire series. He was the family pet and as such pertinent in the composition. Peregrine Falcons can live up to 25 years, in captivity. So he shouldn't have been sidelined.

The Tuscany Valley residents are gathered at a function; to remember Chase who is presumed drowned in the San Francisco bay, (a scene from season 7, 1987-’88):

Fr. Curtis: “Could I have everybody’s attention please! I would like to thank you all for coming and for sharing with the Gioberti family, in celebrating the memory of Chase.”

Angela: “Thank you Father! Everyone in the Valley knew how Chase and I felt about each other but despite our differences he was family and he was a Gioberti. So he will be honoured as such. I present this gift to his family, as a reminder how much he meant to each and everyone of us.”

The plaque reads: ‘CHASE GIOBERTI – YOU WILL BE MISSED’.

The opening titles designer from season 6 onwards should have incorporated Apollo. Not sure just how the bird would have integrated with the ellipsis.

Emma didn't spend much time with Apollo, from what I recall. It was either Angela, Lance or Chao-Li.
I'm sure Julia used to talk to him and tell him her murderous plans, that cuckoo bird...
