I have some plot questions

I admit I am a skimmer. I watched on Netflix/Amazon prime and did skip some episodes/scenes (especially the season 4 Eva crap because I did not want to see my favorite couple being destroyed)
Along the way I missed a few things and I was wondering if anyone could help me.

Whatever happened to George (not Adam playing George to drive Steven crazy) . The George that was Lauras flamboyent husband/Liams stepfather

Did I miss a significant time jump?
In season 2 we saw Liam and Fallon finally get together at the Masquarade ball and they were solid the rest of the season until Steven hit him over the head. I know they were engaged but it seemed like they were actually only together a few days... a week at most.

Then at the beginning of season 3 when Fallon is trying to make Liam remember her it seems like the relationship was a lot longer. She said something about him forgetting the past two years, and when he was starting to get his memory back they talked about a trip to Miami, and practically living together... so I was wondering if a i missed a time jump. When he went to her telling her he remember at the magazine launch 2 years was referenced again

Also When Fallon was in the coma there were flashbacks to their first christmas together...So in theory even though it seemed like a very quick relationship on screen, how long have they been together?

I have no idea to be honest. I think he just conveniently disappeared? Was he even cast, I don't remember him to be honest.

There was a month time jump between seasons 1 and 2, but I think that's it up until season 3? I think it's just a case where the writers flubbed and tried to sell their relationship a bit too hard.

When Fallon said that Liam had 'forgotten two years,' it might have been a statement on the extent of his memory loss, not a statement on the length of time they had been together. Perhaps she meant he forgot two years of everything that happened in his life, since Laura and his ex-girlfriend (Ashley?) swooped in and tried to convince him that he and Ashley were still together.

The Christmas scene you mention was not a flashback but instead was Fallon's dream while she was in the coma, something of a "hope for the future". I think it was the first time the show hinted that Fallon and Liam were destined to have twins. The dream was enough to make her wake up in time for Christmas, though.

Well I was confused because I know the scene where they were wrapping gifts was a dream of Fallons, but the scene I was talking about was Liam sharing a Christmas memory with her. They were singing at the piano and then she asked for her present and they argued. I think that was supposed to have actually happened because Liam said that was the best Christmas they ever had even though they argued . A little later during Fallons Christmas dream she asked again for her present and he laughed and said "i'll never make that mistake again" So that made me believe the first one was Liams memory and actually happened. I was just wondering when it had happened and what the general length of their relationship was.
